///7 Beers for 7 Years!/// As our 7th Anniversary approaches, we wanted to share more details about the beers we are excited to share for the big day. The first is a special one brewed with Chris and April from @brewerynovalis , a brewery in planning from Syracuse, New York. We made this together back in the first half of December to kick off this run of collaborative brews. Chris and April are some our oldest “brewer friends”, they visited us shortly after our tasting room first opening in January of 2016 and we have been friends ever since! They continue to be an amazing resource to us on all things from production to recipe development, especially our lager program. We are so happy for them to get Brewery Novalis opened this year and can’t wait to hang out with them in New York when that happens! Here are some details on the beer we made…

Petite Paix is a 4.6% abv dry hopped Pilsner brewed with French grown pilsner malt, 2-Row barley, flaked maize, and a touch of melanoidin malt. We hopped it in the kettle and gave it a small dry hop with a hard to find and super interesting hop called Petite Blanc. The hop was found in the backyard of an old hop grower in the Champagne-Ardennes region of France. We fermented it with a Swiss lager yeast that finished the beer with an almost champagne level of dryness. The aroma is prominent lemon and a little floral, well-balanced bitterness and a dry but soft body followed by flavors of honey dipped crackers and more hop driven lemon with light tropical fruit.
